Thai Chili Ramen with Meatballs

Instructions:

Pre-Preparation:

Steam Kettle/Tilt Skillet or steamer (From Frozen):

1) Place unopened pouch of Sweet Chili sauce in boiling water or steamer

2) Heat for approximately 30 minutes to an internal temperature of 145F (HACCP Critical Control Point - 145F for 15 seconds)

3) Once the product reaches recommended temp., place on serving line or warmer (HACCP Critical Control Point - 145F or higher)until ready to use

4) Open the bag carefully to avoid being burned



Broth Preparation:

1. Combine 1/2 of the JTM Sweet Chili Sauce (2.5 lbs.) with 2 1/2 pts of beef broth

and heat to a boil the hold hot until ready to assemble dish.



Pasta preparation:

1. Prepare Yakisoba noodles (or rice noodles) cooking to al dente and shocking/cooling to hold until ready for service.



Meatball Preparation

1. Heat meatballs in oven (350*F) on a sheet pan or 2" full size insert for approximately 8-10 minutes.) Hold at 145*F or higher (HACCP - Critical Control Point) until ready for service.

Asian vegetable Preparation:

Combine - 1lb. shredded Napa cabbage or Bok Choy, 1/2 lb. Shredded carrots, 1/2 lb. sliced Shiitake mushrooms and 1/2 lb. Julienne Red Bell Peppers

1. Prepare Asian vegetable medley in steamer, wok or griddle cooking to al dente



To assemble dish: (plated)

1. Add 4 oz of cooked noodles at bottom of soup plate or bowl

2. Top Noodles with 4 meatballs (cut in 1/2's)

3. Top Meatballs with 2 oz spoodle of vegetable medley

4. Top all with 4 oz of Thai chili beef broth

5. Finish with 2 oz of Thai chili sauce



Garnish ideas:

- 1 Tbsp of Fresh Chopped Cilantro/Scallion blend

-1/2 oz of crispy fried noodles (chow-mein)

-Pineapple tidbits

-1/2 oz finely diced Red peppers

-Sprinkle of sesame seeds

- Chiffonade of Purple basil
